    潮泉镇玉皇山香椿的叶子上部呈紫红色，是不同于其它地方香椿之处。谷雨前，将香椿嫩芽折下
洗净凉干，加适量碎盐搓揉，放数天后即可当小菜食用。
    玉皇山香椿芽，食到最后香味亦格外重，即使是二、三茬椿芽，其味道仍鲜美纯香。
