    牛蒡，别名牛菜、大力子、牛子、蝙蝠刺、东洋萝卜。牛蒡是一种以肥大肉质根供食用的蔬菜，
叶柄和嫩叶也可食用，其肉质根含有丰富的营养价值。牛蒡肉质根细嫩香脆。可炒食、煮食、生食或
加工成饮料。
    牛蒡为菊科草本直根类植物，性温、味甘、无毒。别名大力子、东洋参、牛鞭菜等。牛蒡子和牛
蒡根既可入药也可食用。原产我国公元920年左右传入日本，在日本栽培训化出多个品种，20世纪八十
年代末由日本引种菜用牛蒡，大部分出口，少量进入国内市场。牛蒡在我国长期做为药用，近年来才
开始对牛蒡的营养价值，食用价值和药理进行研究。
