    清咸丰年间创制，“泰安三宝”之一，同治年间定为贡品。选用
上旺村特产的黑色坚硬茄子，用烧砖磨去茄皮，榨出茄汁，盐腌后，榨出盐水
，投入新鲜甜酱缸内，半月后捞出上市。清香肉嫩，鲜美可口。
