    棘皮动物是仅见于海洋的一门无脊椎动物，包括海参、海胆、海星、蛇尾和海
百合等。中国产有约20种食用海参，其中约有10种有较高的商品价值，北方的刺参
质量最佳。
    海胆纲某些正形海胆的生殖腺(卵)营养价值高，有特殊的鲜味。沿海某些地方
的渔民也吃海胆卵，但不普遍，产品大部分出口日本。
