　　山东栽培花椒历史悠久，有很多栽培品种，在生产上应用的有：
　　香椒子又名小椒、川椒。7月下旬至8月上旬即成熟，又叫二伏椒。果实较小，
鲜果出椒皮率较高(一般1.5～1.8公斤鲜果晒干皮0.5公斤)，椒皮颜色鲜艳，深红
色，香味浓，质量上乘。
　　大红袍也叫大椒、狮子椒。8月中、下旬成熟。树势健壮高大，分枝粗，刺大
而稀，适应性强，耐旱、抗冻，寿命较长。果粒较大，果皮暗红色，干后不变色，
有香气。出皮率较低，一般要4～4.5公斤鲜果出1公斤干皮。
